The cook spread Boursin cheese on Melba Crackers and then place a thin slice of Filet Mignon cooked medium over the spread.  The Filet Mignon melted in my mouth.  The crispiness of the cracker and smoothness of the cheese really complimented the steak.  &lt;br /&gt;&lt;br /&gt;I decided to replicate the recipe for New Years eve.  Instead of using Filet Mignon I chose Top Sirloin.  They were fantastic, I gave the recipe to several of my guests. Next, I turned off the grill and sprinkled the fresh goat cheese on the Strip Steak.  I closed the grill lid, and let the steak sit for about a minute.  As I placed the Steaks on each plate, the cheese was just about to melt. &lt;br /&gt;&lt;br /&gt;My guest loved the presentation of the steak.   It gave the plate some added color and texture.  Adding fresh goat cheese  is an inexpensive way to change up your Steak dinner. Its difficult to compare the &lt;a href="http://blockncleaver.com/prime-rib.aspx"&gt;Ribeye Steak and the Prime Rib Roast&lt;/a&gt; because they are basically one in the same.  The Prime Rib Roast is an uncut Ribeye Steak with the only real difference being the way they are cooked. &lt;br /&gt;&lt;br /&gt;The name &lt;a href="http://blockncleaver.com/prime-rib-roast.aspx"&gt;Prime Rib Roast&lt;/a&gt; was intended to describe the USDA grade of Prime and the cut being a Rib Roast but many people are now referring to a Prime Rib Roast as describing the cut of meat only.  If you are wanting a USDA Prime Rib Roast, make sure the product is actually graded USDA Prime.  The top side of the Rib Roast should contain at least 1/8 inches of fat which will keep the meat moist during cooking.  When cooking the Rib Roast, place the roast in the cooker with the fat layer on top. &lt;br /&gt;&lt;br /&gt;As mentioned, the &lt;a href="http://blockncleaver.com/prime-rib-filet.aspx"&gt;Ribeye Steak&lt;/a&gt; is cut from a Rib Roast and can also be called a Prime Rib Filet, a Delmonico or a Cowboy Ribeye if the bone is left in. Filet Mignon's are cut from the Tenderloin which is the least used muscle by a cow and thus the most tender.  The Chateaubriand is a very decadent roast and basically is just one large Center Cut Filet Mignon.  The &lt;a href="http://blockncleaver.com/filetmignonsteak.aspx"&gt;Filet Mignon&lt;/a&gt; can also be found in the Porterhouse Steak and a smaller portion of the Filet is included in the T-bone Steak.&lt;br /&gt;&lt;br /&gt;Another way the Filet Mignon can be prepared is by wrapping it with bacon.  &lt;a href="http://blockncleaver.com/baconwrappedfilet.aspx"&gt;Bacon Wrapped Filet Mignon Steak&lt;/a&gt; is most often the end cuts of a tenderloin.  These Filets can contain up to three small pieces of the tenderloin which are then wrapped in bacon.  Since these are end cut pieces, the Bacon Wrapped Filet Mignons are generally less expensive than the non-bacon Filets. Aging steak has two benefits; adds that delicious steak flavor and increases the tenderness.  Aging steak can take a good steak and transform it into a great steak.  However, beef has to be aged correctly to achieve the benefits of aging.&lt;br /&gt;&lt;br /&gt;The entire beef muscle that the steak is cut from must remain intact for the aging process to work correctly.  It also has to be kept in cool temperatures like a refrigerator.  There are two methods to age beef; wet aging or dry aging. Wet aging means the beef is vacuum sealed and kept in a refrigerator.  Dry aging is when the steak is stored fully exposed to the open air of a cooler and kept at a specific humidity level.&lt;br /&gt;&lt;br /&gt;What exactly happens during aging?  Over time the muscle fibers of the beef breaks down which is what will make a steak more tender.  Aging will also give steak a bolder flavor.  A steak with 5 days age will be dramatically different than a steak with 28 days age.
