One important thing is to make sure that the company you are using specifies they are operating out of a USDA inspected plant. The USDA takes food safety extremely serious. All operations in production are closely monitored. This includes all handling meat from cutting to packaging of the product.
When buying steak online it is important to have an understanding of the grade of the meat. There are several USDA grades of beef. For the most tender and flavorful steaks I recommend either prime or the upper 2/3 of choice. If a site does not inform you of the grade contact their customer service and they should be able to provide you with the information. Do not be fooled by creative names for products to imply a high USDA grade.
