Depending on where you live, the strip loin steak will either be referred to as the New York Strip Steak or the Kansas City Strip Steak. They are one in the same.
The Strip Steak is cut from the short loin which is where the majority of the best steaks come from in my opinion. This muscle is not used often which results in a tender, flavorful Strip Steak. Because the strip loin is a sizable muscle, the strip steak can be cut into larger portions than the Filet Mignon. That is perfect for steak lovers.
The Strip Steaks can be boneless or include the bone. To give you a better idea of what a bone-in Strip Steak is, imagine the side of the T-Bone that contains the majority of meat and that's what the bone-in strip steak is.
The Strip Steak can either be grilled, broiled, or pan-fried or a combination. Grilling a Strip Steak is my favorite method of cooking, no matter the season.
